Perfect Pancakes

This recipe for Perfect Pancakes comes from the Vegan Brunch cookbook.

Ingredients:
1 and 3/4 cups of all-purpose flour
2 tsps baking powder
1/2 tsp salt
1 tsp cinnamon
2 tbsps canola oil
1/3rd cup water
1 cup of plain soymilk
2 tbsp of maple syrup
1 tsp vanilla extract

Directions:
1. Heat a skillet over medium heat
2. Mix the ingredients
3. Cook for 3 minutes on each side until bubbles form. Serve hot and top with syrup or fresh fruit.
